Going beyond an internal temperature of 145°, even during the meat's rest period, can result in a dry pork chop. Always remember that the temperature of your meat will continue to climb during the rest period after being removed from a high-heat grill or pan. Try removing your chops at an internal temperature of 135° and resting under tented foil for 5 - 10 minutes. Your ideally cooked pork chop will be juicy and slightly pink in the middle.

We cooked these on a grill hanging over our campfire and they were awesome. The smokey flavor off the open wood fire, combined with salt and garlic powder, produced a perfect pork chop.
