The Porterhouse is often referred to as the king of steaks, and rightfully so! The porterhouse is large cut from the short loin and includes part of the tenderloin filet as well as the strip loin - the best of both worlds!
Like other large steaks, the Porterhouse benefits from being tempered before cooking. Try removing from the fridge at least 30 minutes before cooking. Letting your steak reach nearly room temperature will allow for a more even cook.

Yet another perfect Linz product!
I Sous-Vide'ed this thing to 130 degrees for 1.5 hours, and only seasoned it with salt. The steak was so ridiculously tender and delicious, and massively flavorful even with just salt. It's hard for me to think of a better steak anywhere, and it'd easily rival any steak in a 5-star steakhouse.
Linz also expertly trimmed all the dry shell off the steak. Right out of the package it was perfectly trimmed and ready to rock. Other butchers often leave a lot of the dry shell on, which results in a less-than-desirable experience.
You've definitely got to give this steak a try! It is simply awesome.
