  • The temperature of your meat will continue to climb during the rest-period after being removed from a high-heat grill or pan
  • Remove your chops at an internal temperature of 135°
  • Rest under tented foil for 5 - 10 minutes
  • Pork chop should be juicy and slightly pink in the middle

*The USDA now recommends a safe internal temperature of 145° for pork chops
